Today I noticed my 2005 had a transmission dipstick under the upper radiator hose. Is that even possible?

Very possible & very practical !
The 5r55e, unlike most later model Transmissions, does have a complete bonafide DipStick.
Makes it easy to check ATF level+color routinely & add MerconV as needed.
Routine here is to check ATF level once a month & always before any longer road trip.
Also use that DipStick\DipTube every 4kMiles\6Mths
to handpump 3/4qt old ATF from Trans, along with 1/4qt old ATF from SteeringReservoir,
then refresh both with 1qt of new MerconV; old ATF goes to recyle along with routine Engin Oil+Filter change.
Also do a full service on Trans every 33kMiles\4yrs:
* TransPan Drop
* ValveBodyBolt Retorq
* New TransFilter
* New TransPanGasket
* Band Adjust
